Quick and easy when I’m feeling sick and queasy- Pulled pork & Dumpling soup

I just finished eating lunch and had to write a quick post about the soup I slurped down. Once again, this dish was Asian inspired, and best of all I was able to use up some things in the fridge that I needed to get rid of sooner than later.

Ingredients

  • 1 carton of chicken broth or the equivalent amount of home-made broth
  • 2 stalks of celery sliced on the bias
  • 2 carrots sliced on the bias
  • 1 leek chopped
  • About a handful of dumplings
  • Left over pulled pork (any meat will do or you can keep it veggie)
  • 2 cups of water
  • 1/2 tbsp of soy sauce
  • 1 tspn of minced garlic
  • Pinch of red pepper flakes
  • Salt and pepper to season

This soup was super easy to prepare and my inspiration really just came from what was already lying around in my fridge/pantry. Both Marty and I are feeling a little under the weather today, so soup just sounded like the perfect comfort food, plus I made enough that if we didn’t feel like cooking dinner tonight, we’ll have some soup leftover.

Begin by preparing all the veg. I sliced them on the bias for a nicer look, but it doesn’t really matter.

Pour broth in to a pot and set at medium high. Add veggies, seasonings and garlic, soy sauce, pulled pork (any kind of meat will do, or you can skip the meat altogether). Then add about 2 cups of water.

Bring the soup to a boil and then simmer. I wanted to make sure that the pork was cooked through. If you’re preparing your meat from raw, season and cook it first in a pan before adding it to the soup to avoid cross contamination.

I added the dumplings at the end since they cook really quick and can easily fall apart if cooked too long. Now, typically I make my own dumplings (I swear I do!) but since I really wasn’t up for that today, luckily I keep a stash of frozen dumplings in the freezer. If you don’t have dumplings, any kind of pasta or noodle will do.

This soup was sooo tasty and definitely filled us both up. Soup is another versatile meal that can be made in bulk to freeze for another time or served right away and takes only minutes to prepare. It is one of my favourite meals, and always makes me feel good.

Such a wonderful & tasty soup, especially when it is chilly and damp outside, or if you’re feeling under the weather like we are. Marty’s mom can whip up some killer soups, so I know the odds are usually stacked against me when I make a soup for him. This soup, however, was a definite crowd pleaser (ok, more like boyfriend pleaser). Most often the things I whip up on a whim are my biggest successes and become staples on our household menu.  Hope you enjoy it!
